So, what exactly is a spring roll?

To be honest, there are so many definitions and variations of a spring roll that there isn't exactly a definitive answer. 

So we're basically going with the definition that they are a type of snack/appetizer that consists of a filling that is rolled in some type of wrapper/dough and either fried or served fresh. 

What we do know with absolute certainty is that spring rolls are the bomb. 

They're like individually wrapped packages of deliciousness that can be eaten alone or with a tasty dipping sauce (though, don't double dip, because that's frowned upon in most social situations). 

Whether you like them fried, cold, filled with meat or veggies, wrapped in rice paper or a dough, you appreciate the subtle art that presides with spring rolls. Seriously, how do they wrap those little buggers so tight and neatly? Mind. Blown. 

Here are our favorite spring rolls (in no particular order) in NYC.

The key to a good fried spring roll is that the exterior is crispy without being greasy. It's the absolute worst when you pick up a roll expecting to hear and feel a crunch when you take a bite, only to find a soggy, floppy mess that seeps excess oil down your hands 

Yeah, you will NOT find those spring roll failures here! At the Saigon Shack, you can expect a mouthful of flavorful veggies in a crisp wrapping. Make sure to dip it in the fish sauce to take these rolls over the top. 


2. Bulgogi Spring Rolls from Sam's Spring Rolls (23 Essex Street)

Where do true spring roll fanatics eat? Sam's Spring Rolls, of course. It's pretty much spring roll heaven. While they offer a variety of spring rolls, we chose the "Bulgogi Spring Rolls," which are their beef spring rolls. They're made with bulgogi beef, mushroom soy, light soy, sesame oil, and onions.

The thing that sets Sam's apart from other spring roll shops is their sauces. They offer a "Chimichuri," a "Creamy Verde," a "Ginger & Scallions," and a "Crack Sauce." We love the "Crack Sauce," made with fish sauce, cilantro, garlic,and thai chili peppers. It's their hottest and most delicious sauce. 


3. Summer Rolls from Thai Son (89 Baxter Street)

Sometimes, it's better not to fry your spring rolls. The "Summer Rolls" from Thai Son is definitely one of those times. The "Summer Rolls" consist of a filling of vegetables and shrimp wrapped with a rice paper. 

They are served with a peanut sauce that is the perfect combination of sweet and nutty to complement the rolls themselves. 


4. Fried Spring Rolls from Indochine (430 Lafayette Street)

The "Fried Spring Rolls" from Indochine are excellent for those who want a bit of a heartier appetizer without filling up. Though, we'd be a-okay with filling up on these as our entrees. 

They are served with a vermicelli, chicken, and vegetable filling in a rice paper, fried, and served with a sweet and sour sauce. 


5. Shrimp & Lobster Spring Rolls from Atlantic Grill (1341 3rd Avenue)

Who says you can't find great spring rolls from a sushi/fish restaurant? Not us, because these are some of the best spring rolls we've ever had. 

The "Shrimp & Lobster Spring Rolls" are served for lunch and dinner with a spicy coconut sauce. Though you would think that something as fresh and delicious as shrimp and lobster would be better off served fresh, think again. These rolls are crispy, crunchy, and deliciously perfect.
