Recently, we told you about Danny Meyer's decision to end tipping in all of his restaurants in New York City.
His move jumpstarted a conversation about the ineffective tipping system in place in America, and the wage inequalities between servers and chefs.
Almost a month after this announcement shook the hospitality industry, Danny Meyer's most expensive restaurant, Modern, stated that they are already receiving an increasing number of resumes for cook positions in spite of the recent shortages of trained cooks due to the draw of increased pay in other occupations.
It comes as no surprise that other NYC restaurants are jumping on this growing attempt to fix the injustices of the current tipping system.
Gramercy Park's Italian hotspot, i Trulli, has announced that they will also do away with the tipping system. In a surprising move, they stated that they would focus on creating yearly salaries with benefits for their front of house staff by doing away with gratuity.
While many are quick to scoff that this move is furthering the gap between front of house (waitstaff) and back of house (chefs/cooks) wages, owner Nicola Marzovilla stated that his cooks make anywhere from $500-$900 in overtime every week.

Unfortunately, we don't see the fairness in stating that because cooks make overtime, they don't deserve salaries and benefits as well, but we'll wait and see how i Trulli does with the change.
