Law school has been known to do some ridiculous things to people.
Some stop sleeping, some become vicious argumentative jerks, and some people ghost everyone they know and love.
New York CIty (by-way-of-Iowa) writer and force behind United Nations of Food, Charles Biblios, is dealing with the latter scenario: an absentee law student girlfriend. While we wish her the best in her educational pursuit, we've no choice but empathize (in more ways than one) with her very hungry-- and very lonely-- freelance writer boyfriend.
In lieu of romantic contact with his significant other, Biblios is seeking to experience cuisine from every nation on the planet-- without ever leaving NYC.
We think this is a fantastic idea.
"When I moved to New York City, I decided to try to eat food from every country in the world without leaving the city. Why? Because I think NYC is probably the only place in the world where you could do something like this. And also because… well, my girlfriend is in law school, so I won’t really see her for about three years, even though we live together. I’m substituting food for sex. (I hope I’m just joking.)"

Out of 160 countries listed on his site, he's eaten food from 129. That's pretty damn impressive.

Now he's got some parameters, and they make sense. None of this has to happen in a restaurant; Biblios is cool with eating at your grandma's house, or on the street from food carts/trucks.
The last crucial detail is that he's not looking for fancy dining experiences. Budget is something to be considered, and he's capping it around $15/meal.
