During a recent visit, I dove into the Wagyu Bolognese Risotto and Braised Duck, both crafted by the talented Chef Yoshi. The risotto was a luxurious combination of creamy texture and rich flavor, while the Braised Duck showcased a tender, flavorful preparation that perfectly balanced traditional techniques with creative flair. I paired these delights with a chilled glass of 2022 Katsunuma Winery Aruga Branca 'Clareza' Koshu, bright and crisp. To top it all off?
