Madrina Vegana Finds a New Home at Brooklyn Roots Collective, Bushwick’s New Plant-Based Hub

A flavorful new partnership is blooming in Bushwick: Madrina Vegana, New York City’s first and only vegan Mexican food truck, has officially landed at Brooklyn Roots Collective (255 Randolph Street), a groundbreaking new venue dedicated to sustainable living, ethical commerce, and plant-based innovation. This 20,000-square-foot space at the intersection of Bushwick and East Williamsburg is set to become one of NYC’s largest destinations focused on conscious living. 


Founded by Executive Chef Erica Muñoz, Madrina Vegana has become a beloved staple in the city’s vegan food scene. Erica, a proud Latina entrepreneur and former esthetician, launched her food truck during the pandemic as a single mother—and quickly earned the nickname “The Taco Queen of New York.” Her cooking is rooted in the culinary traditions of her grandmother, transforming nostalgic family meals into plant-based versions of classic Mexican street food. From smoky jackfruit tinga to crispy deep-fried tacos, each dish is bold, comforting, and handcrafted with heart.

Now, Madrina Vegana joins forces with Brooklyn Roots Collective and its founder and CEO Jennifer Juliano, a dedicated vegan and visionary Brooklynite whose mission is to make sustainable living accessible and inspiring. The Collective blends urban farming, secondhand markets, plant-based cuisine, and live entertainment across a flexible indoor-outdoor venue that transforms from a vibrant daytime community hub into a high-energy nightlife destination.

As part of the Collective’s evolving food program, Madrina Vegana will be one of many rotating culinary stars. The venue will host a chef’s kitchen, food truck residencies, and vegan pop-ups, with fresh ingredients sourced just steps away through a partnership with Oko Farms, Brooklyn’s leading aquaponics collective. Oko Farms manages rooftop aquaponics, herb gardens, and pollinator-friendly plantings, ensuring that many of the ingredients used on-site—from taco garnishes to cocktail herbs—are grown sustainably and hyper-locally.

Guests can enjoy their meals in the lush courtyard, which opened July 11, featuring picnic tables, yard games, a converted bus that will soon house a vegan bakery, and an outdoor bar topped with a rooftop herb garden. Two expansive indoor bars, including one on the mezzanine, serve creative plant-based cocktails and zero-proof options, all crafted with fresh herbs and sustainable spirits. The space also includes a projector for game days and movie nights, making it a lively yet conscious gathering place.

Brooklyn Roots Collective has also partnered with Overthrow Hospitality—the team behind Avant Garden, Cadence, Ladybird, and more—as a preferred catering partner for weddings and events, bringing elevated vegan dining to celebrations big and small.
